🌯 Air Fryer Mexican Chicken Rolls: crispy, spicy and full of flavor 🔥

Mexican Chicken Rolls in Air Fryer


🧾 Ingredients

🥄 1 tablespoon olive oil
🍗 450 g chicken breasts (without skin or bone, cut into small pieces)
🌶️ 1 teaspoon ground cumin
🌶️ 1 teaspoon chili powder
🔥 ¼ teaspoon cayenne (adjust to taste)
🌈 1 medium red pepperchopped into small pieces
🌽 150 g frozen sweet corn
🥬 2 cups (about 60 g) kale or kalechopped
🍅 1 cup (240 g) Mexican or spicy tomato sauce
🧅 6 chiveschopped
🌿 ¼ cup (15 g) fresh parsleychopped
🧂 Salt and pepper to taste
🥟 24 sheets of dough for rolls guy egg roll either spring roll
🧈 ¼ cup (60 g) melted butter


👩‍🍳 Step by step instructions

1️⃣ Prepare the filling

In a large skillet, heat the olive oil over medium heat.
Add the chicken along with the cumin, chili powder and cayenne.
Cook for about 5–7 minutes, stirring until the chicken is golden brown and cooked through.

Add the red pepper, corn, kale and Mexican salsa.
Cook for another 4–5 minutes until the pepper is tender and the liquid has reduced slightly.

Finally, add the chives, parsley, salt and pepper to taste.
Mix well and let it cool for a few minutes.


2️⃣ Assemble the rolls

Place a sheet of dough on a clean surface.
Duck 1–2 tablespoons filling in the center.
Paint the edges with a little warm water, fold the sides toward the center and roll tightly (like a small burrito).
make sure seal the edges well so that they do not open during cooking.


3️⃣ Cooking in the air fryer

Preheat the fryer to 200°C for 3 minutes.
Place the rolls in the basket without piling them up.
Paint them lightly with melted butter to achieve a more uniform browning.

Cook during 10–12 minutesturning them over halfway through.
They will be ready when they are golden, crunchy and with an irresistible aroma.

💡 If you prefer to bake them:
Bake them at 220°C for 15 minutes on a tray with greaseproof paper, also greased with butter.
