This recipe is not only quick and clean, but it allows the flavors to integrate evenly. The mix of cream cheese, cheddar cheese and Monterey Jack With the shredded chicken it creates a creamy and tasty filling that contrasts perfectly with the crunchy crust of the tortilla. And to top it off, a touch of homemade guacamole and pico de gallo provides freshness and color.

Mexican Chicken Flautas with Guacamole in Air Fryer
120 ml red or green sauce 🌶️
60 g sour cream 🥄
55 g cream cheese at room temperature 🧀
1 sachet of taco seasoning (approx. 25 g) 🌮
1 tablespoon fresh lime juice 🍋
3 cups (360 g) cooked and shredded chicken 🍗
150 g grated Monterey Jack cheese 🧀
100 g grated cheddar cheese 🧀
12 flour tortillas 20 cm in diameter 🌯
Olive oil to brush 🫒
Guacamole 🥑
sour cream 🥄
Shredded fresh cheese 🧀
Lettuce in strips 🥬
Pico de gallo 🍅
Sliced green onion 🧅
Spicy sauce to taste 🌶️
In a large bowl, mix the salsa, sour cream, cream cheese, taco seasoning, and lime juice until smooth. Add the shredded chicken and grated cheeses, mixing well so that the filling is uniform.
Wrap the tortillas in a damp cloth and microwave them for about 20 seconds to make them flexible. Place 2–3 tablespoons of the filling on the bottom third of each tortilla and roll tightly into a flute shape.
Brush the flutes with a little olive oil on the outside. Preheat the air fryer to 200°C. Place the flutes in the basket in a single layer, leaving space between them for air to circulate properly.
Cook the flautas for 7–8 minutes, turning halfway through, until golden and crispy. Work in batches if necessary to avoid crowding.
Serve immediately with guacamole, sour cream, fresh cheese, lettuce, pico de gallo, green onion and hot sauce to taste. Each flute becomes a crunchy bite with contrast of flavors and textures.
For an extra spicy touch, add finely chopped jalapenos to the filling.
If you want more creaminess, mix a little cream cheese into the sour cream before adding to the chicken.
The flautas can be prepared ahead of time and frozen before cooking; just cook directly in the fryer for a few more minutes from frozen.
