Galician quesada or cottage cheese cake with thermomix

Preparation

1. We start the preparation by preheating the oven to 180 ° C and leaving the mold ready where the cake will be baked, it must be greased and floured to prevent it from sticking when unmolding. The mold should be approximately 28 cm.
2. To continue, place the butterfly on the blades of the Thermomix bowl, pour the eggs and sugar into the Thermomix bowl and program.
3. 6 minutes / Temperature 37° / Speed ​​4.
4. Immediately again program.
5. 6 minutes / speed 4.
6. Then, add the measures of yogurt and milk to the mixture, program.
7. 15 seconds / Speed ​​3.
8. Subsequently, pour the flour and yeast, program.
9. 10 seconds / Speed ​​3.
10. Once the flour and yeast are mixed, add the lemon zest, 2 tablespoons of brandy and the 500 grams of cottage cheese to the preparation, program.
11. 30 seconds / Speed ​​3.
12. We are almost finished, remove the butterfly from the Thermomix bowl blades, if there are some lumps, mix very gently with the spatula.
13. Pour the preparation into the cake mold, put it in the oven for 50 minutes, at a temperature of 190°C.
14. A very important fact, so that the surface of the cake is not too golden, you can cover it with aluminum foil, but that it is not flush with the mold, leaving space for the cake to rise when it grows in the oven. A few minutes before the end of the cooking time, remove the aluminum foil.
15. Remove from the oven, carefully unmold and let cool for 2 to 3 hours.
