Ingredients
- 600 grams of ripe raff tomatoes
- 200 grams of zucchini
- 1/2 large green bell pepper
- 2 cloves of garlic
- 100 ml of olive oil
- 3 tablespoons of vinegar
- Salt to taste
- 20 - 50 ml of Water
- 1 slice of white bread toasted and cut into cubes, if you are celiac celiac bread
- Some fresh coriander or Chinese parsley leaves to decorate the dish
- Ice (optional)
Instructions
- To start you must have the Thermomix ready to add the ingredients. And let's get to work!
- Wash the tomatoes, zucchini and green bell pepper very well (the tomatoes and zucchini should be peeled as well as the garlic).
- The fastest way to peel the tomatoes is to blanch them, or soak them for a minute in hot water.
- Add to the Thermomix glass the tomatoes chopped in not too small pieces and the zucchini in pieces, and add the 100 ml of olive oil, the 3 spoonfuls of vinegar (it can be wine vinegar to vary the flavor a little) and add the usual amount of salt or to your taste. Program the Thermomix 30 seconds / speed 5.
- Check the thickness of the soup and the touch of salt.
- If you need to add water to soften the thickness, add it and reprogram the Thermomix 30 seconds / speed 5.
- This operation can be repeated as many times as necessary to obtain the desired cream thickness.
- The size of the tomatoes and cucumber will influence this.
- Another option to thicken the cream is to add some white bread, a few pieces to the Thermomix for 45 seconds / speed 5
- Finally, to serve you can show off by letting your imagination run wild.
- One option will be to place some pieces of ice on a tray and over it the large soup tureen so that each guest can serve himself as he likes and the Gazpacho does not lose its pleasant temperature.
- Or serve the gazpacho in individual cups accompanied by a garnish of diced toast, cucumber, onion and/or green bell pepper cubes.
- Don't forget to use fresh cilantro or parsley leaves for decoration.
