For the mass:
52 grams of wholemeal rye flour
17 grams of fresh pressed yeast
102 grams of water
1 teaspoon of sugar
For the bread:
252 grams of corn flour
302 grams of water
12 grams of salt
32 grams of oil
102 grams of rye flour
Preparation of corn and rye bread with Thermomix
Once you have all these products, follow the steps that we indicate:
Start with the dough. To do this, add the flour, yeast, sugar and water to the robot’s glass. program to
speed 3 / 10 seconds.
Put the resulting dough in a bowl, cover it and let it rest for an hour to double its volume.
Then, for the bread and after forty minutes of the previous step, pour the water into the glass and set to
speed 1 / 100º / 3 minutes.
Add the cornmeal and start the robot at
speed 3 / 1 minute.
Let it cool down to 37º.
Add the first reserved dough, the rye flour, the salt and the oil to the glass. program to

Take the dough out of the glass, shape it into a ball, sprinkle it with a little flour and let it rest for another hour.
