This cake was a classic many years ago, in which house a contessa cake was not eaten at any celebration, now they call it a vienneta
and it was a cake of frozen cream and chocolate that was very good, because now we can’t make it with our thermomix very easily.

750 grams of very cold whipping cream
175 grams icing sugar
1o grams of butter
150 grams of fondant chocolate
Preparation of contessa or viennetta style frozen cake with thermomix
The first thing we are going to convert our sugar into icing sugar, we put the 175 grams of sugar in our glass and program
20 seconds / speed 9
Add the cream that is very cold (reserve 2 or 3 tablespoons for later) and the rest we are going to assemble
speed 4 (without time we are looking until it is done)
We put it in a pastry bag and reserve
We put in our glass the butter, the 2 or 3 spoons of cream that we had reserved and the chocolate in pieces and we program
5 minutes / 50ºC / speed 1
We put baking paper on a tray and put the melted chocolate from our glass on the tray, spreading it with a brush so that we have a very thin layer left, then we reserve it in the freezer
Now in a mold from Plun Cake, we line it with plastic wrap, leaving enough left over on the sides to later wrap it completely
When the chocolate that we have in the freezer is hardened, we will cut sheets the size of our plun cake mold and put a sheet of chocolate, cover it with the cream and so on until the ingredients are finished, ending in a layer of cream
Reserve a little cream in the fridge to decorate later
Cover everything well with plastic wrap and put it in the freezer for 3 to 4 hours.
