Frozen cake style contessa or viennetta with thermomix
This cake was a classic many years ago. In what house did you not eat a contessa cake in any celebration?
Now they call it a vienneta and it was a cake of cream and frozen chocolate that was very good, because now we can make it with our thermomix in a very easy way.
We tell you how.
Ingredients to make Frozen cake style contessa or viennetta with thermomix
750 grams of cream to mount very cold
175 grams of icing sugar
1 grams of butter
150 grams of chocolate fondant
Preparation of the Frozen cake style contessa or viennetta with thermomix
The first thing we are going to convert our sugar into icing sugar, we put the 175 grams of sugar in our glass and program
20 seconds / speed 9
We add the cream that is very cold (we reserve 2 or 3 tablespoons for later) and the rest we will assemble
speed 4 (without time we are looking until it is done)
We put it in a pastry bag and reserve.
We put in our glass the butter, the 2 or 3 spoons of cream that we had reserved and the chocolate in pieces and we programmed
5 minutes / 50ºC / speed 1
We put baking paper in a tray and put the melted chocolate from our glass in the tray, extending it with a brush so that we have a very thin layer, then store it in the freezer.
Now in a mold of those of Plun Cake, we cover it with cling film, making it over enough on the sides and then wrap it completely.
When the chocolate that we have in the freezer is hardened, we will cut sheets of the size of our plun cake mold and put a chocolate foil, cover it with the cream and finish the ingredients in a layer of cream.
Reserve a little cream in the fridge to decorate later.
We cover everything with the wrapping paper and put it in the freezer between 3 and 4 hours. After that time, we will unmold and with the cream that we will decorate over and put back in the freezer until it freezes completely.
We take a while before consuming to be able to cut it well.
