Ingredients of Quick Frozen Fruit Foam

100 grams of sugar
300 grams of frozen pineapple (or the fruit of your choice)
The juice of one lemon
2 egg whites
fresh mint leaves

Preparation of quick frozen fruit foam

The first thing that our thermomix will help us to do is the icing sugar, this powdered sugar will allow the mixture to be very smooth without any type of lumps or texture.
Add 300 grams of sugar to the Thermomix bowl, cover well and program.

Then, add the frozen pineapple and the lemon juice, the latter so that the fruit does not oxidize, program.
20 seconds / Progressive speed 5-10
With the help of the spatula, push down the remains of the mixture from the walls of the Thermomix bowl.
Carefully place the butterfly on the Thermomix bowl blades, and add the egg whites, separated one by one and being careful not to sneak some of the yolk, because it would prevent the whites from rising, program.
