Apple Vichyssoise with Thermomix
Ingredients
- 300 grams leeks (only the white part)
- 500 ml. of water
- 3 golden apples (green apples)
- 4 tablespoons of mild olive oil
- 250 ml. (1 glass) evaporated milk
- Salt to taste
- Ground white pepper to taste
- Nutmeg to taste (optional)
Instructions
- In the glass of the Thermomix add only the white part of the leek cut into small pieces, program. 5 seconds / speed 5.
- Then add the 4 spoonfuls of olive oil, cover well and program 10 minutes / temperature change / speed 2.
- Remember to always clean the edges or walls of the thermomix glass with the spatula so as not to waste anything.
- Then add 200 ml in the first part. Of water (you can replace the water with chicken broth) close the glass of the thermomix and program it. 30 seconds / speed 7.
- Then, add the apples, previously washed, peeled and chopped in small pieces, also add salt, white pepper to taste, nutmeg (it is an optional ingredient that will give an exquisite flavor).
- Finally, add the remaining 300ml of water and program 20 minutes / Temperature 100° / speed 2.
- Afterwards, check that the apples are soft and cooked, if not, program a little more time. 5 minutes / Temperature 100° /Speed 2.
- When checking that the apples are completely soft, program 2 minutes / Temperature 100° /Speed 7.
- Add the 250 ml of evaporated milk and again set 3 minutes / Temperature 100° /Speed 2.
- To have a soft and light cream, strain the preparation through a strainer. And let it cool down for 2 hours.
