Apple Vichyssoise ingredients with Thermomix

300 grams leeks (only the white part)
500 ml. of water
3 golden apples (green apples)
4 tablespoons light olive oil
250ml (1 glass) evaporated milk
Salt to taste
ground white pepper to taste
Nutmeg to taste (optional)

Preparation of Apple Vichyssoise with Thermomix

In the glass of the Thermomix add only the white part of the leek cut into small pieces, program.
5 seconds / speed 5.
Then add the 4 tablespoons of olive oil, cover well and program
10 minutes / Varoma temperature / speed 2.
Always remember to clean the edges or walls of the Thermomix bowl with the spatula so as not to waste anything.
Then add in a first part 200 ml. Of water (you can substitute the water for chicken broth) close the glass of the thermomix and program.

Add the 250ml of evaporated milk and program again
3 minutes / Temperature 100° / speed 2.
To have a smooth and light cream, pass the preparation through a strainer.
