Ingredients
- 1 kilogram of fresh squid
- 1 garlic clove
- 30 grams of olive oil
- 40 grams of cognac
- 125 grams of white wine
- 200 grams of crushed natural tomato
- 100 grams shallot
- 100 grams of onion
- 1 bay leaf
- 1 fresh parsley stick
- salt
- pepper
Instructions
- Clean and cut the squid into rings or pieces and put aside in our thermomix glass the onion, and the shallot in pieces, together with the garlic and program 4 seconds / speed 4
- With the spatula we lower all the pieces stuck to the sides of our thermomix glass, add the oil and poach for 10 minutes / varoma / spoon speed
- We add the reserved squid and fry it for 10 minutes / varoma / reverse rotation / spoon speed
- We include the cognac and the white wine and we program 5 minutes / varoma / inverse turn / spoon speed without cup to evaporate the alcohol
- Put the crushed tomato, bay leaf, parsley and salt and pepper and program 25 minutes / 100 º C / reverse rotation / spoon speed with the cup on
