250ml milk
1 egg
60 gr sugar
Vanilla
30 gr cornstarch

500 gr strength flour
15 gr fresh yeast
160ml milk
80 ml anise
Lemon zest
80 gr white sugar
50 ml invert sugar
80 ml sunflower oil
pinch of salt

All the ingredients in the glass, except for the vanilla,
6 minutes / 90° / speed 4
then we add the vanilla
5 seconds / speed 5
Transfer to a bowl and cover with skin film (in contact with the cream, so as not to generate a crust), when it cools, we take it to the fridge
MASS
Temper the milk, add the crumbled yeast and stir, let it rest for 10 min (this way the yeast will activate when we see little bubbles on the surface, so we will know that it is in optimal conditions for use)
We put in the glass of the thermomix, the egg, sugars, zest, oil,

then milk with yeast,

finally the flour and salt,
10 seconds / speed 4
Let rest for 20 min for the flour particles to hydrate
Then we knead some
6/8 min / spike speed
Remove to a bowl, cover and let them increase in size (approximately 2 hours).
After leavening, we degas, kneading for a minute by hand.
FORMED
We weigh our dough and make 10 portions.
We round each portion and cover, let it rest for 10 min.
Then, each ball, we crush it slightly with our fingers, and; With the help of the back of a glass slightly oiled, we press in the middle of the dough. We are leaving them on the oven tray lined with baking paper. We cover and let them rise (45 to 60 minutes / approximately)
After time, our holes will have almost disappeared. Being very careful not to crack the dough, we enlarge the hole with the help of our hands. Brush the buns with beaten egg, and place the cream in the hole.
Preheated oven to 180°, heat up and down, bake for about 20 min.
