It is one of the most used sauces in Italy to eat pasta, the nimbre comes from the Italian town of Amatricie where it is believed to originate. This recipe calls for spaghetti
The sauce is delicious, it is a mixture of tomato and cheese and other ingredients that make when you compare it with our spaghetti with tomato, these last ones are very bad.

Ingredients of Amatriciana sauce and spaghetti a la amatriciana with thermomix
amatriciana sauce
Ingredients for spaghetti a la amatriciana:
30 grams Of olive oil
1 chilli pepper
100 grams of guanciale
50 grams of white wine
350 grams of natural peeled tomatoes
Salt
a pinch of sugar
Spaghetti
1 liter of water
1 teaspoon salt
300 grams of spaghetti
In addition we need:
75 gr of grated pecorino cheese. (or alternatively a good grated sheep’s cheese)
Preparation of amatriciana sauce and spaghetti a la amatriciana with thermomix
Put the oil and the chilli in the glass of our thermomix
We program 5 minutes, temperature 120º, speed 1.
add the chopped torreznos to the oil and the chilli
We program 5 minutes, temperature 120º, speed 1.
open the jar and add the white wine and leave it without the goblet to favor evaporation
we program 3 minutes, temperature 120º, speed 1
open the jar and add the cheese and leave for 2 more minutes
we program 3 minutes, temperature 120º, speed 1
Place the container in a glass and reserve
removing the excess oil from the sauce and pouring it back into the Thermomix bowl
add the peeled and chopped tomatoes to our Thermomix bowl, add the salt and the sugar
we program 10 minutes, temperature 120º, speed 1
Mix the tomato with the reserved meat. We reserve hot.
Preparation of amatriciana sauce and spaghetti a la amatriciana
Without washing the glass, add the water used to cook the spaghetti and bring to a boil.
We program 7 minutes, temperature 120º, speed 1.
Add the salt and mix
We program 2 seconds, speed 3.
We add to the glass of our thermomix the spaghetti by the mouth and
we program 10 minutes, 100º, spoon speed, turn to the left.
(The 10 minutes can be changed for the time set by the manufacturer of the pasta you are making)
Drain the pasta in the Thermomix basket and when it is well drained mix with the reserved sauce.
