1. The first thing we are going to do is place the oil with the onion and garlic in our Thermomix bowl and blend everything

3. Once crushed, fry the onion and garlic for what we program
4. 12 minutes / varoma temperature / speed 1
5. now add the wine, our Albariño, to the garlic and onion, leaving the goblet unused so that the excess alcohol evaporates and program
6. 2 minutes / varoma temperature / speed 1
7. Add the fish broth, 250 grams, and place the potatoes in the basket and place it in the glass and the monkfish and clams in the varoma, add salt to taste and program
8. 18 minutes / Varoma temperature / speed 1
9. At the end of the programmed time, remove the varoma and the basket and add the cornstarch, diluted in a beaker of water, programming again
10. 2 minutes / Varoma temperature / speed 1
11. Put the monkfish, clams and potatoes in a bowl
12. before putting our sauce on top covering it all, we are going to crush it one last time, now that the temperature of it will have lowered a little and we program

14. We pour the sauce over the monkfish, potatoes and clams and our dish will be ready to serve
