In this recipe we will combine it with potatoes and prawns in a delicious leek and potato cream with thermomix.
200 grams of leek cut into slices (preferably the white part)
1 spring onion in pieces (whole white and green part)
25 grams butter
150 grams of potatoes, peeled and cut into small pieces (for quick cooking)
500 ml. water or chicken stock
300 grams liquid cream (if you want a low calorie cream, you can use light cream)
Salt, pepper and nutmeg to taste.
Instructions
To begin this delicious dish, you can fry the prawns in a pan with olive oil and salt or simply cook them in water and salt (whatever your preference). Set aside to garnish the dish.
Then in the glass of the thermomix blitz the pieces of leek and spring onion and the garlic cloves. Program. 10 seconds / speed 10
Immediately add the butter and the olive oil to sauté. 15 minutes/ Temperature 100°/ Speed 1
At the end of the first 15 minutes, add the chopped potatoes and the water or chicken stock (whichever you prefer) and program. 15 minutes / Temperature 100°/ Speed 1
Check the potatoes for doneness, if their consistency is still not soft (or fully cooked), program another 5 minutes. 5 minutes / Temperature 100°/ Speed 1
Immediately add the cream and spices (salt, pepper and nutmeg to taste) and mix to form the cream. Program. 20 seconds / speed 5
Check the consistency of the cream, if more liquid is required, add a little more water or chicken stock. 5 minutes/ Temperature 100°/ Speed 1
If more creamy is required, puree for a few seconds more. 20 seconds / speed 5
Serve immediately in a bowl and garnish with the prawns.
You can also serve this cream with toasted bread.
