This recipe has been sent by our friend Luz Maria Lagoa Vives. Hello companions. Today I bring you some delicious muffins with wholemeal flour with walnuts, and a light touch of aniseed, this is completely optional, but try it, because it gives it a spectacular aroma. Very juicy and fluffy crumb.

Ingredients for Spelled muffins with thermomix walnuts
325 grams wholemeal spelled flour (you can use any wholemeal flour)
5 eggs (M)
160 grams brown sugar
8 grams chemical yeast
1 teaspoon baking soda
1 teaspoon cinnamon
half teaspoon ginger
250ml oil
100ml milk
140 grams walnuts (lightly chopped)
Orange zest (in my case, candied) Pinch of salt
10 ml anise (optional)
Preparation of spelled muffins with thermomix walnuts
We sift the dry ones (flour, yeast, bicarbonate, spices and salt),
10 seconds / speed 8
Separate and reserve.
Now we chop the nuts,
3 seconds / speed 5
set aside and reserve
Butterfly in blades, eggs and sugar in a glass,
8 minutes / speed 3’5
Add the milk, oil, anise and zest,
1 minute / speed 3’5*
Remove the butterfly and add the reserved dried ones,
5 seconds / speed 4
We finish mixing with a spatula.
Add 100 grams of walnuts (reserve the rest), mix with a spatula.
Pour into a jug and put in the fridge for a few hours. Then, oven preheated to 220° C / heat up and down
Fill the 3/4 parts of the capsules, sprinkle a bit of brown sugar on the surface and add the reserved walnuts.
Lower the temperature to 200° C / bake for about 12/15 minutes / after checking the toothpick, it comes out clean. Turn off and let cool on rack.
