Preparation of revolconas potatoes with thermomix

1. Add the garlic cloves to the Thermomix bowl,program.
2. 5 seconds/Speed​​5
3. With the help of the spatula lower the remains of crushed garlic from the walls of the Thermomix bowl towards the leaves,then add the olive oil,program.
4. 5 minutes/Temperature 100°/spoon speed
5. Next,carefully place the butterfly on the thermomix blades and add the bay leaf,the potatoes,the water and a pinch of salt,program.
6. 25 minutes/Varoma temperature/Speed​​1
7. Carefully remove the butterfly from the blades,also remove the potatoes from the Thermomix bowl with the help of a slotted spoon and place them in the basket,reserve the potato cooking water for a few minutes and discard the bay leaf.Put the butterfly back.
8. On the other hand,heat a frying pan and place the pieces of bacon until they are well toasted(it is not necessary to add oil since the bacon will release its fat),do not discard this oil since we will use it for the preparation.
9. In that same pan,after removing it from the heat,use 2 or 3 tablespoons of oil that comes off the bacon,add the paprika,mix and reserve.
10. Then,add the potatoes back to the Thermomix bowl,add the pieces of bacon(reserve a few pieces just to decorate)and the oil mixed with paprika,program.

The texture and density of the potatoes will be what you want,if you like the pieces of potatoes and bacon to be noticed in each bite,you should only set it to a lower speed.And the water from cooking the potatoes that was reserved will be used so that it can be a little more soupy if it is to your liking.
13. Check the point of salt,remember that the bacon is somewhat salty so it is not necessary to use a lot of salt.
14. Serve in individual portions,in small bowls or clay pots,place on top of each portion a piece of bacon that you had already reserved.You can also accompany it with a small portion of torrezno.
