Ingredients (2 people)

For the salmon

  • 🐟 2 fresh salmon loins
  • 🧂 Salt and pepper to taste
  • 🫒 A splash of olive oil
  • 🍋 Lemon slices (optional)

For the lemon sauce

  • 🧄 1 clove of garlic
  • 🍋 30 g of natural lemon juice
  • 🍷 50 g white wine (optional)
  • 🥛 100 g cooking cream or evaporated milk
  • 🫒 20 g olive oil
  • 🌽 1 teaspoon cornstarch
  • 🧂 Salt and pepper to taste
  • 🌿 Dill or parsley (optional)

Step by step preparation

1️⃣ Steamed salmon

Season the salmon loins with salt and pepper and place them in the Varoma container. Add a few lemon slices if you like them.
Put 500 g of water in the Thermomix glass, place the Varoma in its position and program 15 min / Varoma / speed 1.
Remove the Varoma and reserve the salmon covered so that it does not cool.

2️⃣ Lemon sauce

Empty the glass and add the garlic. Shreds 5 sec / speed 7.
Add the olive oil and sauté 3 min / 120°C / speed 1.
Add the lemon juice, white wine, cream, cornstarch, salt and pepper. Kitchen 6 min / 90°C / speed 3.

Taste the sauce and adjust the salt or lemon if necessary. Add fresh herbs right at the end for a more intense aroma.

🍽️ To serve

Place the salmon on the plate and napa with hot lemon sauce. It goes perfectly with steamed vegetables, white rice or boiled potatoes.

Tips and variations

  • 🐟 You can use hake, fresh cod or sea bass.
  • 🍋 For a smoother sauce, reduce the lemon to 20 g.
  • 🥛 Replace the cream with Greek yogurt for a lighter version.
  • 🌿 Dill goes especially well with salmon.
