Compared to traditional fried cordon bleu, this version is just as crispy but much less heavy. In addition, cod combines wonderfully with soft cheese and ham, creating a balanced and elegant dish.

Dry the cod fillets well with kitchen paper. This is key so that the breading sticks better and is crispier.
Have the ham, cheese and beaten egg ready before you start assembling the packages. In 10 minutes you will have everything ready.
Lightly salt and pepper the cod fillets. Place a slice of ham and a slice of cheese on one. Cover with another fillet and press the edges well to seal.
If you need to, wrap each piece in plastic wrap and press gently to hold its shape. Remove the film before breading.
Dip each packet first in beaten egg and then in breadcrumbs, pressing lightly so that it adheres well.
Preheat the air fryer to 190°C for 3–5 minutes.
Place the cordon bleu in the basket without crowding them. Drizzle lightly with oil and cook 10–12 minutes, turning halfway through.
If you want them crispier, increase to 200°C and cook 1–2 minutes more.
Mix the white wine, oil and garlic. Lightly brush the freshly made cordon bleu to give shine and aroma.
