Sirloin Wellington with Thermomix
It is a recipe native to England, which named after the 1st Duke of Wellington (Sir Arthur Wellesley), who was a key figure in the defeat of the French army during the War of Independence in Spain, among other things. Apparently the sirloin bears his last name because whenever he offered a dinner at home he ordered that such an original dish be prepared, because he has puff pastry, to surprise his guests.

Ingredients
1 clean pork tenderloin
1 sheet of puff pastry
Salt and pepper to taste
1 beaten egg
Olive oil
For the caramelized onion:
720 grams of chopped onion
30 grams of liquid caramel
62 grams of butter
1 small teaspoon of salt
a pinch of pepper
32 grams of olive oil
Preparation
When you have gathered all those ingredients, follow the steps that we indicate:
The first thing will be to prepare the caramelized onion. To do this, pour the onion into the robot’s glass and program
speed 5 / 4 seconds.
Then add the butter and oil. program to

Add the caramel, pepper and salt. program to

To prepare the sirloin, put a little oil in a pan and when it is hot add the sirloin to seal it. Add the salt and pepper.

Close the puff pastry over the tenderloin and seal it with a beaten egg, which you will also use to brush the entire tenderloin.
Put the tray in the oven, previously preheated, and keep it there at 200º for about 20 minutes.
