If you have ever been lucky enough to eat at the Viridiana restaurant, you will know that the Riojan lentils they make have that well-deserved fame as one of the best.
And although making a lentils is extremely easy, the touch they give them and that mixture of ingredients makes them unique, if you ever can, don’t stop going or ordering them at home. This recipe calls for chorizo.

Ingredients
400 grams of La Sagra lentils
2 Asturian smoked sausages
2 Asturian smoked blood sausages
1 ham bone
1 onion
1 leek
2 carrots
2 tomatoes
4 cloves of garlic
1 green bell pepper
1 small bundle of coriander
2 heaping tablespoons red curry paste
400 grams coconut milk
1 sobrasada to cut some dice
Preparation
we put the lentils the day before to soak in cold water
The onion, the leek, the carrots, the pepper and the tomatoes, we will put them whole or split in half, because at the end we will have to remove them
We put the lentils, the water, the coriander, along with the chorizo and black pudding in pieces, the ham bone and the vegetables and we program
30 minutes / 100ºC / left turn / spoon speed
after that time we add the coconut milk and the red curry and program
5 minutes / 100ºC / left turn / spoon speed
We put all the content in a bowl and remove the ham bone, on the other hand we remove all the vegetables and put them back in the Thermomix bowl together with a little broth from the lentils themselves and crush
10 seconds / speed 10
once crushed we put it back in the bowl with the rest of the lentils and stir with a wooden spoon
We serve the dishes and we put a dice of sobrasada on each plate and ready to taste
