This recipe has been sent by our friend Luz Maria Lagoa Vives. Hello friends, like every pastry Friday, a new recipe. Today I bring you an orange cheesecake, with intense chocolate icing and aroma of orange and whiskey (this step in the icing is completely optional, but the liquor is hardly noticeable, and it gives the chocolate an exceptional flavor.
I also have to tell you that I have used a dark chocolate with a 70% cocoa proportion, which, together with the orange juice and the liquor,,, bufff, I would not really change any ingredient, but that depends on taste.

Ingredients for Orange cheesecake with chocolate with thermomix
BASE (18/20 cm mold)
- 150 grams cocoa cookies
- 60 grams melted butter
- Orange zest
STUFFED
- 420 grams cream cheese
- 200 grams fresh cheese (you can use the total 620 grams of the creamy cheese)
- 180 grams sugar
- Vanilla
- Orange zest
- 3 eggs
- 50 ml cream (preferably whipped)
- 80/90 ml orange juice (freshly squeezed)
- 1 level tablespoon of cornstarch
GLAZED (chocolate ganache)
- 120 ml cream (to mount)
- 120 grams dark chocolate 70% cocoa
- splash of orange juice
- whiskey splash

BASE
- Cookies in the glass,
- 10 seconds / speed 8
- Set aside in a bowl, add the zest and melted butter, mix.
- Line the base and sides of the mold with baking paper.
- We overturn the dough and distribute by surface.
- We take to the fridge
STUFFED
- Cheese and sugar by the glass,
- 1 minutes / speed 3
- add the zest and essence,
- 10 seconds / speed 3
- then the eggs one by one, until the first one is added, we do not add the next one,
- while we continue in speed 3
- Now the cream and orange juice,
- 10 seconds / speed 3
- Finally the cornstarch
- 10 seconds / speed 3
- We took the base out of the fridge and turned it over.
- Oven previously preheated to 150°, heat up and down
- Bake for about 50 minutes. Then turn off and leave for 1 hour.
- After that time, we open the oven door and leave 30 minutes inside.
- Then we remove and take to the cold for about 2/4 hours. (We will do these cares with the baking to avoid as much as possible that our cake cracks).
GLAZED
- Split the chocolate and add the very hot cream, stir until the chocolate is completely dissolved. Add the liquor and the orange juice (if you have opted for it). We remove.
- Take the cake out of the fridge and pour the frosting over it.
- To create that effect in the chocolate glaze, I have left it in the fridge for 8 minutes, then I have taken it out and I have dragged it with a dessert spoon, to make those indentations. I have cut strips of orange with a peeler, and thus I have made the decoration.
- But that already goes in tastes.
- We take back to the fridge for 1 hour for the chocolate to solidify, and we can unmold
- ONLY LEFT TO ENJOY, GOOD APPRECIATION.
