This dish combines juicy eggs, crispy bacon, fresh tomato and sweet pepperscooked with very little oil and with a touch of grated cheese and fresh herbs for a delicious and nutritious result. Ideal to start the day with energy and a gourmet breakfast in just a few minutes. 😋
The air fryer It allows you to obtain crispy bacon without excess fat and eggs cooked evenly, maintaining their creaminess and juiciness. In addition, you can personalize the recipe according to your tastes: add avocado, spinach or a spicy touch to make it a complete and healthy breakfast.

Fried Eggs with Bacon, Tomato and Pepper in the Air Fryer
🥚 3 large eggs
🥓 Bacon to taste (approx. 3-4 strips or diced)
🍅 1 medium tomatocut into thin slices
🌶️ 1 pepper (red or yellow), cut into thin slices
🧈 1 teaspoon ghee butter or olive oil
🧂 Salt to taste
🌑 Freshly ground black pepper to taste
🧀 1 tablespoon grated cheese (optional, cheddar or gouda type)
🌿 fresh herbs to decorate (cilantro, parsley or chives)
💡 Optional extra: some baby spinach leaves or avocado cubes when serving 🥑.
Wash and cut the tomato and the pepper thinly sliced.
Cut the bacon in strips or cubes as you prefer.
Place ghee butter or a little oil in a container suitable for air fryer.
Distribute the slices of tomato and pepper forming a base.
Add the bacon on top of the vegetables, ensuring that it is evenly distributed.
Break the eggs directly on the vegetable and bacon mixture.
Sprinkle salt and pepper to taste, and if you wish, a small splash of olive oil.
Set the fryer to 200°C (400°F):
6 minutes for eggs with creamy yolks
8 minutes for fully cooked eggs
Halfway through cooking, check the eggs and adjust the time if necessary.
Sprinkle the grated cheese for the last minute to melt slightly.
Decorate with fresh herbs and, if you wish, add leaves of spinach or cubes of avocado when serving.
Serve hot with toasted whole wheat breadavocado toast or directly on a plate as a complete and nutritious breakfast. 🥖🥑
Replaces the bacon by ham, turkey either sausage to vary the flavors.
Duck sliced mushrooms either spinach for a more vegetal breakfast. 🍄🌱
For a spicy touch, sprinkle some chili flakes or hot red pepper.
Serve with avocado or seeds of sesame for extra nutritious and crunchy.
