Preparation of Lobster Croquettes with thermomix

1. Put 30 leaves of fresh parsley (to be adjusted according to taste), 2 cloves of garlic and 30 grams of shallots in the Thermomix. Mixture

3. Then scrape down the sides of the bowl with the spatula.
4. Add 45 grams of bread cut into pieces and without the crust, 100 grams of milk, 400 grams of whiting fillets cut into pieces, 50 grams grated emmental, ½ teaspoon of salt and 1 pinch of pepper in the Thermomix. Mixture

6. Transfer the contents of the Thermomix to a container covered with plastic film and reserve in the fridge for 60 minutes.
7. Add 1 beaten egg with a fork to a bowl.
8. Add 200 grams of breadcrumbs to another container.
9. Using a soup spoon, form slightly flattened medallion-shaped croquettes with the lobster meat mixture (or other seafood or even fish)
10. Using your hands, coat the beaten egg croquettes by dipping them into the breadcrumbs and pressing down lightly so they stick on all sides.
11. In a nonstick skillet, heat oil over medium-high heat. Cook the croquettes in the oil until golden brown on both sides.
12. Drain on paper towels.
13. Serve immediately
