Ingredients of Lebaniego Stew with Thermomix
For the stew:
300 grams of Lebanese garanzos
1 piece cecina (better sheep or goat)
1 piece of ham bone
a piece of white bacon (although it is not eaten, it softens the chickpea)
3 semi-cured chorizos
1 piece of pork rib (if it is marinated better)
1 piece of knuckle or zancarrón
a piece of pig’s ear
1/2 collard greens
70 grams of noodles
For the filling:
Breadcrumbs from 1 loaf bread
1 glass of milk
1 egg
Parsley
1 sausage
Salt
1 pinch of baking soda (to soften)
Preparation of Cocido lebaniego with Thermomix
To start, 12 hours before starting to make our Lebaniego stew, we will soak the Lebaniego chickpeas and the cured meats, the ear, the ham bone and the cecina with a little salt.
