Ingredients for keto rolls with thermomix
- 120 grams of almond milk
- 10 grams of yeast
- 5 grams of honey
- 45 grams of almond flour
- 90 grams of wheat gluten
- 30 grams of bamboo flour
- 30 grams of Erythritol
- 1 level teaspoon of xanthan gum
- 30 grams of almond drink
- 20 grams of butter
- 1 egg
- Vanilla
Preparation of keto rolls with thermomix
- To start our recipe we will put the yeast, honey and almond milk in our Thermomix bowl and program
- *2 minutes / 37º / speed 2 *
- Put the mixture in a bowl and cover it with a cloth.
- We put in our Thermomix bowl the almond flour, erythol, xanthan gum, wheat gluten and bamboo flour and mix them all well
- 30 seconds / speed 2
- We put all our Salinas mixed in a bowl and reserve
- We put two tablespoons of those flours that we just observed in the Thermomix bowl, we leave the rest reserved in the bowl, and we add the 30 grams of the almond drink to the Thermomix bowl and mix
- 2 minutes / 40º / speed 4
- add to our Thermomix bowl the mixture of the flours that we had reserved, the egg, the butter and the vanilla, as well as the yeast mixture and knead
- 7 minutes / spike speed
- separate the dough into balls of the size you want and place them in a metal mold greased with butter
- let it rest for 3 or four hours in a place that is warm inside the oven at a low temperature
- then we bake for 50 minutes at 60º, once they have risen we raise the temperature to 130º and we bake for 25 more minutes to brown
