Ingredients
- 400 grams of spaghetti
- 800 grams of clams
- 250 grams of fish broth
- 500 grams of coconut milk
- 1 glass of white wine
- 4 shallots
- 4 garlic
- 1 spring onion
- 2 tablespoons tomato sauce
- some chillies
- oil and paprika.
Preparation
- We prepare the shallots by cutting them into julienne strips and put them in our Thermomix bowl, cover them with oil and program
- 10 minutes / 120ºC / speed 1
- remove and reserve the shallots on one side and the oil on the other
- we cook the spaghetti, for which we put 1.5 liters of water in our Thermomix bowl, a pinch of salt and program
- 10 minutes / 100ºC / speed 1
- we put the spaghetti by the mouth and program
- the time indicated by the manufacturer / 100ºC / speed 1
- drain and reserve
- with the glass of dry thermomix, we put the peeled garlic and chop
- 6 seconds / speed 8
- Add 25 grams of oil and fry
- 3 minutes / varoma temperature / speed 1
- Add the chives and chop
- 6 seconds / speed 4
- then we fry
- 7 minutes / varoma temperature / speed 1
- Add the white wine and 2 tablespoons of tomato and fry
- 10 minutes / varoma temperature / speed 1 (with the nozzle removed to promote evaporation)
- when everything is like a liquid cream it will be time to add the coconut milk and a pinch of salt and program
- 6 minutes / varoma temperature / speed 1
- We put the cooked pasta in a source and we put the cream on top, we cut the chilli into small pieces and we put it on top and we reserve
- We put the oil that we had reserved from the shallots in our Thermomix bowl, we add the paprika and we program
- 3 minutes / 100ºC / speed 2
- finally we open the clams in a casserole
- We put the oil with paprika in the casserole, put the clams, put over medium heat for 2 or 3 minutes and let the clams open with the casserole covered.
- We put this paprika oil in the casserole with the golden shallots and clams with the fire lit at medium power and leave for two minutes, cover and turn off the heat.
- we put the clams with the oil on top of the pasta and stir and our spaghetti will be ready
