1 kilogram of potatoes, cleaned, peeled and mashed.
90 grams of extra virgin olive oil
1 clove of garlic
1 medium onion (approximately 100 grams)
1 medium green pepper (60 - 70 grams approximately)
1 medium red pepper (60 - 70 grams approx.)
1 teaspoon paprika
Salt and pepper to taste
1 litre of water
1 sprig of parsley
extra virgin olive oil and a few crusts of fried bread for garnish
Pour the onion and the clove of garlic into the thermomix glass to crush, program. 5 seconds / Speed 5.
With the spatula, clean the walls of the glass and then pour in the olive oil to fry, program. 5 minutes/ Temperature 100°/ Speed 2.
Immediately add the potatoes, previously chopped using the "chascar" technique to activate the starch and thus thicken the mixture, also add the diced peppers, the tomato, the teaspoon of paprika, salt and pepper to taste.
At this stage, replace the simmering tray with the simmering basket to prevent splashing, and program. 20 minutes/ Varoma temperature/ Speed 1.
Then add the parsley and again, programme. 5 minutes/ Varoma Temperature/ Speed 1
Leave to stand for a few minutes to cool and then proceed to blend, programme. 2 minutes/ Speed 10
