At home I am always asked to make cupcakes for breakfast on winter weekends, that feeling of cold outside the house and get up and have breakfast a coffee with warm milk and some freshly made cupcakes is priceless and with our thermomix could not be easier.

Ingredients
- 330 grams of flour
- 15 grams of baking powder
- 4 eggs
- 225 grams of sugar
- 125 grams of cream 35% MG
- 200 grams of soft olive oil
- the grated lemon peel
Instructions
- Preheat the oven to 220ºC, prepare cupcake paper moulds.
- To begin we put the butterfly in our thermomix and we put the eggs and the sugar and we programmed 7 minutes / 40ºC / speed 3
- We add the grated lemon rind and program again 7 minutes / speed 3
- Add the cream and olive oil and program 4 minutes / speed 2
- We remove the butterfly We add the yeast, together with the flour and mix 5 seconds / speed 6
- With the spatula we lower remains and program again 3 seconds / speed 6
- Fill the cupcake moulds about 3/4 parts (not to the top) sprinkle a little icing sugar on the surface and put them in the oven 15 minutes / 190 º C (or until they are golden brown)
- We take them out of the oven and hope they temper our cream muffins will be ready.
