Ingredients
100 grams of sugar
20 grams of water
1 large endive or 2 small
200 grams of sliced bacon
2 chicken breasts open in very thin fillet each
Salt and pepper
100 grams of goat cheese cut into small pieces
50 grams of coarsely chopped walnuts
50 grams of currants
220 grams of shallots or onions
50 grams of extra virgin olive oil
250 grams of orange juice
250 grams of sweet wine

Preparation
The first thing we must do is caramelize the endive leaves and we achieve this by placing water and sugar in a pot or saucepan over medium heat, when the water takes on the consistency of syrup but does not darken, remove from the heat and set aside.
On the other hand, place a couple of rectangular pieces of plastic wrap on the work table and on the paper place the slices of bacon forming a rectangle on each one (approximately 100 grams of bacon for each breast).
Once the bacon rectangles have been formed on the plastic wrap, place the breast fillets on top, one in each rectangle, add salt and pepper, and divide the measures of cheese, walnuts, raisins and caramelized endives into two equal parts, and place on the chicken breasts, all those ingredients starting with the caramelized endives.
Roll up each breast as if it were a roll and wrap it in plastic wrap, press very well, so that the filling and the breast are firm. Place the two stuffed breast rolls in the Varoma container. Cover and reserve.
To continue, pour the shallots or onion into the Thermomix bowl and program.

With the help of the spatula, lower the remains of shallots or onions adhering to the walls of the Thermomix bowl towards the blades, pour in the olive oil and program.

Once the cooking of this sauce is finished, add the sweet wine, the orange juice, a little salt and pepper in addition to the cloves to the Thermomix bowl, place the varoma container with the stuffed chicken breast roles and program.
