- 4 sweet potatoes
- Salt and ground pepper to taste
- 1 cup of soft goat cheese
- 3 tablespoons chopped fresh herbs
- 1 leek chopped
- 3 tablespoons olive oil
- Half a cup of breadcrumbs
- 2 garlic
- Grated manchego cheese to taste
