BASE (Measures 15×25 cm)
180 grams lotus biscuits
60 grams butter
LOTUS CREAM FILLING
120 grams lotus biscuits
1 teaspoon cinnamon
120 ml condensed milk
30ml milk
35 grams butter (TA)
CHESSECAKE
400 grams cream cheese
The lotus cream we have made
1 tablespoon vanilla essence
18 ml lemon juice
3.5 sheets neutral gelatin
270 ml cream (to mount)
50 grams sugar
42 grams lotus biscuits crushed
9 lotus cookies for decoration

40 seconds / speed 6.
Transfer to a bowl and add the melted butter, stir.

CHESSCAKE
We place the butterfly on blades, we pour the cream and sugar, we are going to semi assemble, just a few seconds at speed 3.5, we turn into a bowl and reserve in the refrigerator
We put the gelatin to hydrate in cold water for 6/8 minutes /
With the glass clean and dry, add the cream cheese, add at speed 3, 1 min add the Lotus cream,

we add the essence and the juice,

Now the gelatin melted for a few seconds in the microwave (to do this, we drain it and place it in a bowl and melt it for 20 seconds in the microwave), pour it into the glass,
