Cantabrian Cream with Thermomix
As I have already commented to you, Cantabria is very special for me and my family, since a good part of it comes from there, and I love Cantabria we have put several typical dishes of Cantabria to make them with our thermomix, surely we will be putting some more.
But one of those that we need to put and that is a delight is the Cantabrian Cream, made with sobaos pasiegos, a little cream of marc and cream, milk and eggs.

Ingredients
- For the cream:
- 200 gr. of fresh milk of the day or whole
- 250 gr. of liquid cream for riding
- 4 large eggs
- 65 gr. of marc cream
- 120 gr. of sugar
- 30 gr. of corn flour (Maizena)
- For the assembly:
- 6-8 small sobaos
- some marc cream
- 2 tablespoons of sugar
Instructions
- We will start mixing milk, eggs, cream, cornmeal and marc in our thermomix glass. Program 20 seconds / speed 5
- When finished, we program 10 minutes / 90º C / speed 3.
- While we put in a small tray of clay the sobaos to make us base and we wet them with a little bit of the pomace cream, we do not have to get drunk, just a little bit to take the aroma.
- We put the contents of our thermomix glass over the sobaos and let it cool down a bit.
- Before serving, we will put the sugar on top and with a kitchen torch we will caramelize the sugar and our Cantabrian cream will be ready.
