Lemon Avocado Cheesecake Ingredients
for the cookies
1 package of Maria type cookies
100 grams of butter
1 cup of sugar
1 envelope of gelatin (approx. 4 tablespoons)
ground cinnamon
For the Cheesecake
400 grams of condensed milk
1 envelope of curd (We can replace it with 14 g of gelatin or 5 sheets of previously hydrated gelatin)
200 grams of cream cheese type Philadelphia or Filandia
150 grams of evaporated milk
350 grams of avocado pulp
30 grams of lemon juice
1 tablespoon ground cinnamon
Preparation of avocado and lemon cheesecake
Let’s start with the cheesecake base.
We start by preparing the cookie base. Place the chopped cookies in the mixing bowl and grind 10 sec/speed 7. Add the butter and ground sugar and ground cinnamon and mix
10 seconds / speed 5.
Mix very well so that the cookie is wet. Place the mixture in the base of your tart pan and flatten with the help of a spoon. Reserve in the fridge.
We look for a removable mold and we line it with a cooking paper
We place the base of our ground biscuit regularly on the base, we press making it tight and compact.
We reserve in the fridge.
for the cheesecake
We place in the glass of our thermomix evaporated milk together, the curd or gelatin (if we use sheets of gelatin we will let them hydrate and incorporate them at the end of this first step) We program 3 minutes, temperature 90º and speed 2.5.
Add the rest of the ingredients: avocados, cheese, condensed milk, a tablespoon of ground cinnamon and lemon juice. We mix everything programming 30 seconds at speed 5.
While mixing, pour the evaporated milk into the jar.
Finally, we pour the preparation over the base of the cake using a spatula or spoon so as not to damage the base.
We give a few taps on the table to avoid air bubbles and it is very smooth on top. Let set in the fridge for at least 6 hours.
After that time we unmold. For this, we will use a knife or a spatula moistened with a little water and slide along the edges to facilitate unmolding. We finish unmolding and decorate with some slices of avocado and some red fruits.
