Burgos Lemon Cheesecake without sugar with Thermomix

Ingredients:
– 500g of Burgos cheese
– 4 eggs
– 1 lemon
– Sweetener to taste
– 1 teaspoon of vanilla extract

Instructions:
1. Preheat the oven to 180°C.
2. Grate the zest of the lemon and squeeze the juice.
3. In the Thermomix, mix the Burgos cheese, eggs, lemon zest, lemon juice, sweetener, and vanilla extract until smooth.
4. Pour the mixture into a greased cake tin and bake for 30-35 minutes.
