These days we have a lot of nougat, usually too much or during the year that we always have left over from Christmas, or we love nougat and we buy it all year round, we bring you a super fast and delicious recipe, a quick nougat mousse without eggs with thermomix.

Start our recipe by hydrating the gelatine sheets, and in a deep dish full of water, place the 2 sheets of gelatine in the water and leave them to hydrate.
Meanwhile we put the butterfly on our thermomix and we are going to make the cream.
For the cream to come out well it is essential that both our thermomix glass and the cream are VERY cold (otherwise the cream will not come out), so we put the 400 grams of cream and program without time / speed 3.5.
Until we have a whipped cream but creamy with the spatula we lower the remains stuck on the sides of our glass then add the icing sugar and cream cheese and mix 15 seconds / speed 3.
Remove the cream and cheese to a bowl and set aside in the refrigerator without washing the glass and with the remains of the cream add the milk and program 3 minutes / 100ºC / speed 1.
Add the drained gelatine leaves and program 10 seconds / speed 3.
Add the nougat cut into small pieces and a few drops of nougat essence to give it more flavour (if we do not have the essence without it) 10 seconds / speed 3.
Remove the bowl with the reserved cream, add the crunchy almonds on top and gradually pour the milk with the nougat on top, stirring slowly and wrapping it around the nougat.
Serve it in glasses, put a little bit of crunchy almonds on top and that's it!
