Ingredients of Tuscan Cod with thermomix
1000 grams of salted cod
800 grams of tomatoes
1 white onion
4 cloves of garlic
80 grams of extra virgin olive oil
1 sprig of rosemary
100 grams of flour
oil for frying
½ teaspoon of salt
½ teaspoon of pepper
½ teaspoon sugar
80 grams of raisins
50 grams of black olives

Preparation of Tuscan Cod with thermomix
A couple of days before making this recipe you must desalt the cod, this is done by placing the salted cod under the water tap for a few minutes and then immersing it in a generous amount of water for 48 hours, during those 48 hours you must change the water a few 6 times, 3 times a day at intervals of 6 or 8 hours.
Once the cod is desalted, you can start preparing this Tuscan Cod recipe with a thermomix.
Start by hydrating the raisins in a little water.
Later, wash, remove the skin and cut the tomatoes into quarters, place them in the Thermomix bowl and program.

Once the tomatoes are chopped, pour them into a bowl or container and set aside for a few minutes.
Back in the Thermomix bowl, add the onion and a clove of garlic to be chopped, program.
6 seconds / Speed 5.
With the help of a spoon or spatula, lower the remains of garlic and onion that have adhered to the walls and lid of the thermomix container towards the blades, then pour in the extra virgin olive oil and program.
5 minutes / Temperature 100° / Speed 1.
When the garlic and onion sauce is ready, add the crushed tomatoes, a little salt and sugar. Place the basket on the lid (without cup) program.
While the sauce is cooking, drain the cod on absorbent paper, make sure it is dry, cut into pieces, and pass through flour, until they are well coated. A couple of minutes before the scheduled time is up, add the drained raisins and black olives.
Heat plenty of oil in a frying pan (or fryer), briefly fry a sprig of rosemary and 3 cloves of garlic, quickly remove and fry the battered pieces of cod until golden brown on both sides.
Preheat the oven to 180°C.
Once the sauce is ready and the pieces of cod are fried, pour the sauce into an ovenproof dish and place the fried pieces of cod on it. Bake for 20 minutes.
