This recipe has been sent by our friend Luz Maria Lagoa Vives. Hello companions. Well, once again, innovating a new recipe for the use of egg whites. I have left you several ideas in previous posts on what to spend on a sweet preparation, today I have opted to make some tiramisu muffins or cupcakes,,, yes, you heard correctly.

The dough is as if you were putting a bite of that delicious cake on the palate.
Try to do them, it will surprise you for good. As always, a pleasure to be able to share my work ??

Ingredients for Tiramisu Muffins with thermomix

    MASS

    • 7 egg whites with a pinch of salt
    • 125 grams wheat flour
    • 32 grams pure cocoa powder
    • 10 grams soluble coffee
    • 1 on chemical yeast (Royal type)
    • 165 grams sugar
    • 75 grams mascarpone cheese
    • 75 ml sunflower oil
    • 45 ml coffee liqueur

    DECOR

    • 150 ml cream (to mount)
    • 40 grams mascarpone cheese
    • 20 grams icing sugar
    • cocoa powder

    Preparation of Tiramisu Muffins with thermomix

    1. We start by turning on the oven at 180°, heat up and down
    2. We sift the dry ones, for this, we put in the glass, flour, cocoa, coffee and yeast,
    3. 10 seconds / speed 8
    4. set aside and reserve
    5. Wash and dry the glass extremely.
    6. We place the butterfly in blades and mount the whites with the Pizquina of salt,
    7. 5 minutes / speed 3’5
    8. set aside and reserve
    9. Remove the butterfly, add the cheese and sugar,
    10. 30 seconds / speed 4
    11. add the liquor and oil,
    12. 10 seconds / speed 4
    13. now the reserved dry ones,
    14. 6 seconds / speed 3
    15. Finally the whites mounted,
    16. 10 seconds / speed 5
    17. We finish mixing with a spatula
    18. We fill the 3/4 parts of the capsules.
    19. We bake about 22 min. after checking the toothpick, it comes out clean.
    20. Turn off and let cool on rack

    DECOR

    1. We mount the cream with the cheese and sugar at speed 3’5. With butterfly on blades.
    2. We place in a pastry bag.
    3. And we decorate our muffins and sprinkle cocoa
    4. ONLY LEFT TO ENJOY, GOOD APPRECIATION.
