Ingredients
6 duck legs
1 glass of fresh orange juice (4 or 5 large juicy oranges)
100 grams of butter to spread the thighs
50 grams of cognac
3 spoonfuls of sugar
6 tablespoons of water
1 glass of chicken broth
Salt and pepper to taste
2 tablespoons cornstarch
Preparation
To start, season the 6 duck legs with salt and pepper and then spread them with butter.
In a hot pan or saucepan over medium heat, place the thighs to brown on each side, this will take about 20 minutes. When the skin of the thighs is golden (not burnt) on both sides, add the cognac along with the orange juice, lower the heat a little and cook for about 1 hour. Be careful not to let the juice dry out.
Once our duck is ready, remove the thighs with tongs and place them in a serving dish, and again in a separate hot pan or caramelize the measure of sugar.
Add a little of that juice that the cooking of the duck has given off in the Thermomix bowl, the caramel or the caramelized sugar, two tablespoons of cornstarch and the chicken broth, program.

Once again program but decreasing the speed and increasing the cooking time.
13 minutes / Varoma temperature / Speed 1.
Once the sauce is ready, pour it over the duck legs that you have reserved in the dish, so that they are all well coated with this wonderful and thick caramelized orange sauce.
