Ingredients of white fish fillets with orange sauce with thermomix
1 teaspoon grated orange peel
150 – 200 grams of orange juice
50 grams of white wine
2 leeks (approx. 300 g), sliced diagonally
3 – 4 carrots (approx. 300g), sliced diagonally
6 white fish fillets (900 g, e.g. rooster, hake, etc.) seasoned
20 grams of lemon juice
120 grams of goat yogurt
1 – 2 pinches of salt
1 – 2 pinches of turmeric
1 – 2 pinches of ground pepper
1 pinch of yellow food coloring (optional)
4 egg yolks
1 teaspoon chopped fresh parsley
Preparation of white fish fillets with orange sauce with thermomix
Put in the glass ½ teaspoon of orange peel, the orange juice and the white wine. Place the Varoma container in position with the leek and carrot.
Place the Varoma tray (greased with EVOO) with the fish fillets, cover and program
15 minutes / Varoma temperature / speed 1
Remove the Varoma and reserve covered.
Place the butterfly on the blades. Add the lemon juice, the yoghurt, the salt, 2 pinches of pepper, the coloring and, lastly, the egg yolks. Schedule
4 minutes / 70°C / speed 3
Immediately serve the fish with the vegetables, pour over the sauce and sprinkle with ½ teaspoon grated orange peel and parsley.
