Ingredients
4 eggs
135 grams of water
125 grams of milk
165 grams of pastry flour
a pinch of salt
100 grams of butter
5 grams of sugar
For the cream:
40 grams of cornstarch
500 grams of milk
4 egg yolks
35 grams of butter
110 grams of sugar
12 grams of vanilla sugar
For coverage:
55 grams of milk
55 grams of butter
110 grams of chocolate
Preparation
When you have gathered all those ingredients, follow the steps that we indicate below:
Start by preparing the dough and for this add the salt, butter, sugar, milk and water to the glass. Program a
speed 2 / 90º / 5 minutes.
Add the flour and program at
speed 4/15 seconds.
Let it rest for about 15 minutes and then pour the eggs through the nozzle without time, having programmed to
speed 4.
When the dough is homogeneous, pour it into a piping bag.
Place parchment paper on a baking tray and over that go making sticks with the dough. Put the tray in the oven, previously preheated, and keep it there for 10 minutes at 220º. Then lower the temperature to 180º and keep it for about 15 minutes.
Take the tray out of the oven and let it cool.
To prepare the cream, place the butterfly on the blades and add all the ingredients for the cream, except for the butter. Program a
speed 3/20 seconds.
Then reprogram to
speed 2 ½ / 90º / 9 minutes.
Add the butter and put the robot to work
speed 2 ½ / 8 minutes.
Pour the contents of the glass into another pastry bag and let it rest.
Finally, for the coverage, pour the chocolate and butter into a saucepan and put it on the fire to make it in a water bath and then add the milk.
To finish, all you have to do is open the sticks or petisús on one side to fill them with the cream and, finally, add the topping.
