Preparation of Octopus Carpaccio with thermomix
To begin the preparation of this exquisite dish, you must previously defrost the octopus, wash it with cold water, remove the webs between the tentacles, reserve for a few minutes submerged in cold water.
On the other hand, pour the measure of water into the Thermomix bowl together with the onion cut into pieces, the bay leaf and salt, program.

When the water is hot, take the octopus by the head and dip it in hot water 3 times, to scald it, keeping it inside for 5 seconds each time.
Once the scalding technique is done, remove the octopus from the water, place it on a cutting board and separate the tentacles from the head, leaving them whole.
Introduce the tentacles in the glass of the thermomix and program.
Once the cooking time of the tentacles has elapsed, let the octopus rest for 5 minutes inside the Thermomix bowl.
In a round plastic container (about Ø 8 cm and 500 grams capacity, for example fresh cheese, yoghurt, etc.), make small holes in the base.
Drain the octopus in the basket and, while hot, place the tentacles in the prepared container, pressing well so that the liquid comes out through the holes.
Then cover with cling film and place a weight on top.
Let cool for 30 minutes.
Subsequently, reserve in the refrigerator for 1 hour. And then, put it for 1 hour in the freezer to semi-freeze it.
While the octopus rests, wash and dry the glass of the thermomix.
