BASE ELABORATION

1. The cookies to the glass, pulverize
2. 20 seconds / progressive speed 6-10

MOUSSE ELABORATION

1. We put the gelatin to hydrate in the lemon juice, previously strained / 10 min
2. Heat in the microwave for 1 minute / mix
3. Pour the cold cream into the glass, semi-mount (firm, but with shallow grooves), at speed 3 AND a half. We reserve in fridge
4. Mix the condensed milk with the lemon juice, add little by little the cream to the condensed milk with the lemon juice, add the coloring, mix (more or less half), add the mixture of cream and condensed, to the rest of cream, we remove with enveloping movements until fully integrated. Remove the mold from the fridge and pour the mousse. Put in the fridge for a minimum of 6 hours. After the time, we unmold and decorate to taste
