Ingredients of mini lemon mousse cakes with thermomix
BASE INGREDIENTS
150 grams of cookies
70 grams of butter
Lemon zest
1 spoon of sugar
MOUSSE INGREDIENTS
350 ml of whipping cream
125 ml lemon juice (strained)
150 grams of condensed milk
6 sheets of gelatin sheets
Yellow food coloring (optional)
Preparation of mini lemon mousse cakes with thermomix
BASE ELABORATION
The cookies to the glass, pulverize
20 seconds / progressive speed 6-10
Melt the butter together with the sugar in the microwave.
Add the lemon zest to the biscuit powder and mix, add the butter and mix. Pour into the molds or into a single 17-18 cm. We press with the back of a glass. We take to the fridge
MOUSSE ELABORATION
We put the gelatin to hydrate in the lemon juice, previously strained / 10 min
Heat in the microwave for 1 minute / mix
Pour the cold cream into the glass, semi-mount (firm, but with shallow grooves), at speed 3 AND a half. We reserve in fridge
Mix the condensed milk with the lemon juice, add little by little the cream to the condensed milk with the lemon juice, add the coloring, mix (more or less half), add the mixture of cream and condensed, to the rest of cream, we remove with enveloping movements until fully integrated. Remove the mold from the fridge and pour the mousse. Put in the fridge for a minimum of 6 hours. After the time, we unmold and decorate to taste
