1 kg of beef tripe (clean)
70 grams Chorizo
onion blood sausage
150 grams of Bacon
70 grams of oil
30 grams flour
1 pinch of saffron
1/2 teaspoon paprika
a bit of laurel
2 cloves of garlic
chilli to taste
50 ml of tomato sauce
700 grams broth from cooking the tripe

We cook the tripe Madrid style
The first thing to see is that we have the corns clean and cut into squares of 2×2 cm more or less according to taste
