Ingredients
8 – 10 razor shells previously washed with water and salt
4 or 5 cloves of garlic
100 grams of white wine (the one of your preference)
75 grams of extra virgin olive oil
300 grams of fish broth
chopped parsley to taste
1 teaspoon salt
Preparation
Wash the razor clams with plenty of water and a little salt without removing the shells, place them in the varoma container one next to the other, set aside for a few minutes.
Place the garlic cloves in the Thermomix bowl to crush, program.
5 seconds / Speed 5.
With the help of the spatula, lower the remains of garlic that have adhered to the walls of the Thermomix bowl, then add a little olive oil to make a sauce, program.
4 minutes / Temperature 100° / Spoon speed.
