Ingredients of flower cake with filo dough
50 grams of butter (in my case without lactose)
125 grams of sugar
3 eggs
400 grams of milk (in my case without lactose)
1 cinnamon stick
The skin of half a lemon (only the yellow part)
1 package of filo dough
icing sugar to decorate
Preparation of flower cake with filo dough
Preheat the oven to 180º
Put the butter in a bowl and melt for 1 minute in the microwave at low temperature.
Brush the mold with it.
We place a sheet of filo dough on the table, with the help of a brush, we spread it with melted butter only on one side. Then we fold the sheet of dough as if it were an accordion, without crushing it and then we roll it on itself in a spiral as if it were an ensaimada until forming a circle that we place standing up in the center of the mold and so on with the rest of the sheets of the mass
We introduce in the oven preheated to 180º C heat up and down about 25 minutes approx. Until it’s a little golden.
Meanwhile, we put the milk, the lemon peel, and the cinnamon stick, in the Thermomix® glass and infuse, programming 10 min. / 90º degrees / speed 1. Once the time has elapsed, we remove the cinnamon stick and the lemon peel. We reserve, better in a jug, to later pour better into the glass.
It is not necessary to wash the Thermomix® glass, we introduce the eggs and the sugar into it, we program 2 minutes / speed 4. after the first minute, we gradually incorporate the infused milk mixture, still warm, by the vowel of the Thermomix®. We reserve, already in the same Thermomix® glass.
When the phyllo dough is half golden, remove the mold from the oven and spread the reserved mixture over it, taking care to distribute it all over the cake and return to the oven for another 25-30 minutes, until it is well baked and the cream Curd. If you see that it is browning a lot on top, you can only put the heat on the bottom.
Let cool, unmold and once cool, or warm we can sprinkle with icing sugar
