2 aubergines, sliced
1 teaspoon dried oregano
1 teaspoon of sugar
200 grams of mozzarella
410 grams of chopped tomato
250 grams of water
30 grams of olive oil
Salt and basil to taste
Preparation
When you have gathered all those ingredients, follow the steps that we indicate:
Place the eggplant slices on a tray. Add salt and let them rest for half an hour.
Meanwhile, add the mozzarella to the glass of the robot and program
speed 5/5 seconds.
Reservation.
Rinse and then dry the aubergines with kitchen paper and place them vertically in the Varoma. Put this in the Thermomix
Pour the water into the glass and program at 1 / Varoma temperature / 15 minutes.
Remove the Varoma and reserve. Remove the water.
Add the chopped tomato, basil, oil, sugar and salt to the glass. Program a
speed 1 / 120º / 4 minutes.
Put the aubergines in a baking dish, top with the sauce and then the cheese you have reserved. Put the dish in the oven, previously preheated, and keep it there for about 5 minutes at 200º.
