Ingredients for eggplant meatballs with tomato with Thermomix

To prepare about five or six servings of meatballs of this type, you have to gather the following products:

620 grams of eggplant chopped and with skin.
Salt and black pepper to taste.
55 grams of water.
3 or 4 garlic.
1 egg.
185 grams of hard bread.
30 grams of olive oil.
Leaves of basil chopped.
3 or 4 sprigs of fresh parsley.
For the sauce:
820 grams of whole tomatoes already peeled.
Salt to taste.
2 tablespoons of sugar.
50 grams of olive oil.

Preparation of eggplant meatballs with tomato with Thermomix

When you have gathered all those ingredients, follow these steps:
Add two cloves of garlic to the glass and program
speed 7 / 3 seconds.
Add the eggplant and program to
speed 4 / 6 seconds.
Then, pour the oil and start the Thermomix at
speed 1 / 120º / 6 minutes.
Pour the water and program
speed 1 / 100º / 6 minutes.
Then put it back to work
