Cristina Pedroche cheesecake ingredients with thermomix
- 180 grams of cookies (1 package)
- 70 grams butter
- 500 grams cream cheese
- 250 grams cream 35% fat
- 5 eggs – a pinch of salt
- 100 grams fresh cheese
- 80 grams parmesan cheese
- 200 grams sugar
- 10 grams flour
Preparation of Cristina Pedroche cheesecake with thermomix
- The first thing we will do is preheat the oven to 190ºC
- we proceed to prepare the base
- we put the package of cookies in our Thermomix bowl, they are worth any since they are to make the base, from biscuit maria or if you like a hard and robust biscuit base as I do, I like the digestive biscuit more, which gives it more consistency and schedule
- 15 seconds / speed 7
- We lower with the spatula the remains that are stuck to the sides of our thermomix
- Add the butter in pieces and that is not very hard and program
- 2 minutes / 50ºC / speed 3
- Prepare a mold between 22 and 25 cm and put the cookies with the butter as a base and press well with your hand so that we have a tight base
- Reserve the base in the fridge.
Let’s go to the filling
- We put the Parmesan cheese in pieces in our Thermomix bowl and crush
- 20 seconds / progressive speed 8-9-10
- Add the cream cheese, the cream, the eggs, the fresh cheese, the sugar and add a pinch of salt and program
- 2 minutes / speed 5
- Add the flour and program
- 2 minutes / speed 5
- We put the content in the mold that we had reserved, on top of the cookies
- we put the cake in the oven at 190ºC for 40-45 minutes (if we like it more liquid we can leave it only 35 minutes, if we like it very curdled 45-50 minutes)
- We take it out and wait for it to cool down a bit and then we reserve it in the refrigerator for 4 hours before consuming.
- Remove from the oven, wait for it to cool down and store in the refrigerator for a minimum of 4 hours.
