BROKEN MASS
130 grams wheat flour
25 grams pure cocoa powder
pinch of salt
25 grams sugar.
100 grams butter (very cold)
1 egg
STUFFED
1 egg
3 yolks (we put the whites in the fridge if you are going to use them in the next few days or freeze them)
60 grams sugar
45 grams cornstarch
450ml milk
200ml cream
150 grams dark chocolate (melt and desserts)

We make a ball, wrap in film and keep in the fridge for 30 min.

FORMED AND BAKING
We take the ball of dough out of the fridge.
Sprinkle flour on the work table and roll out the dough on top
Now with the base of the mold previously lined with baking paper, we place the dough and we mold it to our mold (18 cm), we take it to the fridge while we make the filling
Once our filling is finished, we take the mold out of the fridge and pour the cream.
Preheated oven to 150° / heat up and down
Bake for 55 minutes / turn off and leave in for 20 minutes / after that time, open the oven door and leave for another 20 minutes. (We do this so that our cake does not crack), then we remove it and let it cool completely. Once cold and without demolding, we take it for about 4 hours to the fridge so that the cream finishes settling. Then we unmold and optionally we can decorate it with cream and chocolate shavings
